I know with my boys, we like to skip the typical sandwich and reach for something different and delicious, like this Hummus Pizza with Greek Tapenade. Great for lunch, an appetizer, snack, or even a low-key dinner, it’ll be a hit with the whole family.

Ingredients

For the pizza:

  • Pita: A flatbread common in the Mediterranean and Middle East, it can be eaten flat, or split open and stuffed.
  • Hummus: A Middle Eastern dish made from chickpeas, it’s rich, creamy, and has a delicious umami flavor.

For the Greek Tapenade:

  • Roma tomatoes: Slender and more firm than other tomatoes, it’s perfect for salsas, tapenades, and other toppings.
  • Red onion: Mild enough to eat raw, but sharp enough to add bright flavor.
  • Kalamata olives: Much milder in flavor than black olives, they tend to be a bit fruity and sweet in flavor.
  • Feta cheese: Made from goat’s milk, it’s a soft, crumbly cheese great for topping dishes and salads.
  • Parsley: A fresh herb with a bright, clean, slightly peppery taste.
  • Lemon juice: Bright, fresh, acidic flavor that rounds out the tapenade.

How to Make Hummus Pizza with Greek Tapenade

Substitutions

  • Remove the dairy. Take out the feta cheese, or replace it with tofu kept in a salty brine.
